guys, I’m sorry for posting way more food pictures than running/outdoor adventuring, but come on, don’t these pancakes just make you want to lick the screen?

I got the recipe for these Whole Wheat Oatmeal pancakes from Sally’s Baking Addiction, and man oh man were they a hit. I love the fluffy, yet hearty, texture. J requested chocolate chips in his and I topped mine with fresh strawberries and golden flax seeds. J and I both agreed these might just be the BEST pancakes we’ve ever had. I love the use of greek yogurt. Mr. Teeps even snuck a bite and approved. Not that he has a very refined pallet…
So that was Sunday’s brunch. I think breakfast food is my favorite. Besides pizza. I’m pretty much always in the mood for either breakfast food or pizza.
J doesn’t like 90% of breakfast food, which is kinda devastating for me, but at least we both have pizza.
Before chowing down on pancakes, Mr. Teeps and I enjoyed a little Sunday Runday together.
Despite his appearance (small, white fluffy puppy…or as J says “froo-froo dog”), Loki is an incredibly great trail buddy. He’s definitely not afraid to get dirty, climb some rocks and chase some sticks. He has endless energy, but sticks close to me while off leash. We’re working on being even more responsive to me calling him when I want him right by my side (this is super useful if we come upon a cyclist, a horse, or preventing unwanted jumping on passing hikers etc). My secret trick is to keep a squeaker in my pocket (Loki lives and dies by the noise of a squeaky toy) to get his attention, say “here”, Loki runs to my side and then he gets a treat. So far, this is working super well. A good relationship with your pooch is built on trust, respect and love.
About those food pictures…sorry not sorry…here are some muffins I baked Sunday afternoon.
pumpkin-almond slices-chocolate chips-coconut shreds-flax seeds <- basically everything I wanted to use up in the pantry.
I love it when muffin recipes leave just a little extra over the usual 12 tin amount. I use the extra to make some mini muffins, which are super great for snacking/cramming into your pocket for long runs.
Sunday is also clean sheets and full bath for Mr. Teeps day in our house (Teeps usually get a toe bath or 2 during the week). Exotic. I know.
I just love his little ramen noodle hair when it’s wet.
And that wraps up our Sunday/weekend. On to the week…
