Do you have a type of cookie that you literally cannot forget about/ leave alone if you know there are some in the kitchen? These are those cookies for me…and I would wager they might be for you too. I find myself going back into the freezer (yes, you store them in the freezer) and sneaking out juuuust one more. And then another. And perhaps I should just eat that last one because then they are all gone and I can move on with my life.



Anyone else have that problem?
Well these cookies are kind of a problem, but also they’re really not that terrible for you so they’re actually NOT a problem to consume on the regular. In fact, they make a great post run or workout treat packed with some protein from the peanut butter, and antioxidants and zinc from the dark chocolate (my own non-professional nutritionist advice…seek an RD for real advice please). And they are naturally sweetened with maple syrup – so no bonking from refined sugars.
Buuuut they’re still a cookie…if you want something truly “healthy” eat a carrot.
So healthy or not, just enjoy these cookies! They’re pretty much the easiest recipe ever, made with ingredients you probably have on-hand, and the return on investment (ie: tastiness) is very high.

Healthier Vegan No-Bake Cookies

Description
An easy recipe for naturally sweetened, vegan no-bake chocolate peanut butter cookies!
Ingredients
- 1/2 cup coconut oil
- 2/3 cup maple syrup
- 3 tbsp cacao powder (or dutch cocoa)
- 1/2 cup dark chocolate, chopped
- 1 cup creamy natural peanut butter
- 2 tsp vanilla extract
- 2 tbsp almond milk
- 4 cups thick rolled oats
Instructions
Heat all ingredients (except vanilla extract and oats) together in a small sauce pan over medium-low heat until combined and starting to thicken. Remove from heat and stir in vanilla extract then oats. If batter is too thick and not all the oats are getting soaked in the chocolate batter, stir in an additional 2 tbsp of almond milk.
Use a medium sized cookie scoop to dollop on a lined baking sheet (I usually get 2 dozen cookies). Flatten slightly, then place tray in freezer to chill for at least 20 minutes.
Store in and enjoy right out of the freezer. These will get melty at room temperature.
