In the morning, you have two choices: to get out of bed, or to stay in bed. Pretty simple, right? …If only it were so simple.
My first waking thought usually revolves around two options:
Option one: stay in bed a little longer, cuddle with
Loki Jesse, eventually go make some coffee, have a leisurely breakfast on the patio and then go for a run about 1 hour after I wake up.
Option two: bounce out of bed, cram a little something in my face for nurishment and head straight out the door for some early morning miles.
Personally, I know if I do option 2, I’ll be a happier person for the rest of the day because my run will be better (it won’t be so sweltering hot and I’ll have so much more time left in the morning to get other things done).
Case in point this last Tuesday when I got myself to a new trailhead by 6:30am and had the trail all to myself. If you live in the Boulder area, you know this is a rarity. It was all blue skies and dusty, dirty calves. I was in heaven. And I was done before 8am, which meant I had SO MUCH time to get some recipes put together and shoot them in the good morning light in my kitchen. Can I get an amen??
…so why don’t I do option 2 everyday?
BECAUSE I LOVE FOOD
and morning cuddles. The idea of missing my first cup of coffee is bad enough, but not getting some food in my tummy before a run just plain ol’ bums me out.
Enter my favorite pre-run fuel, these tasty little bites. Having a freezer full of them has saved many a morning run for me. They’re easy to digest so you won’t feel too full on your run, but hearty enough to power you through until you have actual breakfast without bonking after a few miles. I know, I could just snack on a pre-made bar from the grocer, but these are SO SIMPLE to make, cheap and don’t have any syrupy “healthy” sweeteners (I’m looking at you, Brown Rice Syrup).
So don’t ever miss another sweat date, whether its with your sweat sister, pup or just yourself. These Cashew Date Bites will save the date. (I’m sorry, I just love date puns)
These are very similar to my Cashew Delight Bites, I know, but I omit the chocolate and added more oats and flax to these to create a more filling fuel. It’s safe to say, these pack a punch.
Cashew Date Bites
2 cups oats
1 cup raw cashew
1/2 cup coconut shaves
1/4 cup flax seeds
8 medjool dates, pitted
1/2 teaspoon vanilla
6 tablespoons unsweetened almond milk
pinch of sea salt
In a high speed blender or food processor, blend the dates until smooth with a few chunks. Add the oats, cashews, salt, vanilla extract and almond milk. Blend until you have an even consistency. Remove dough from blender and place in a small bowl. Stir in coconut shaves and flax seeds. Using a 1.5 tablespoon cookie scoop, scoop dough onto a parchment lined baking sheet. Place sheet in freezer for 30 minutes or until frozen. Bites will keep in an airtight container for 1-2 months….but really, who wants to take bets that they won’t last that long?
Ps. who else’s pooch thinks that whenever you’re on the floor (for post run stretching, yoga, core etc), it’s play time??
