We’ve been on a chocolate cake kick over here, can you tell? Everyone in my fam has been requesting this for birthdays and most recently Father’s Day…because IT IS SO DAMN GOOD.

So yeah, this is the same chocolate cake recipe as my last post for Chocolate Cake with fluffy peanut butter filling except it have summer-inducing-vibes from layers of coconut cream and fresh strawberries. Think of it as an upgraded strawberry shortcake?
I made this for my dad for Father’s Day, because he’s pretty great and deserves all the really freaking good cake in the world.
I brought him the cake and took him for what is now the traditional pulling of the father around in the yard cart.
This is normal, right?

Description
Dark chocolate cake with layers of refreshing coconut cream and fresh strawberries.
Ingredients
- Make one chocolate cake from this recipe
- 2 cups coconut whipped cream (you can find recipes for this all over the internet, I like Minimalist Baker’s)
- 2–3 cups fresh strawberries, thinly sliced for layers with a few halved for the top.
Instructions
Bake the cake layers according to the recipe linked above. Let cool, then cut the 2 layers in half so you have 4 thin layers.
Prepare coconut whipped cream. I actually like to spurge and just buy cans of coconut cream rather than going the chilled coconut milk route. I feel like you can use less powdered sugar and it’s still super creamy.
Start layering cake by frosting first with the coconut cream and then placing the thinly sliced strawberries on top evenly. Then repeat for each layer until the top of the cake, where you’ll use the halved strawberries.
Chill for at least 1 hour before eating so everything comes together nicely. Enjoy!
