Hiiii guys. So I posted this picture the other night on instagram after whipping up one of my favorite “I don’t know what to cook for dinner- throw everything from the fridge in the pan” dinners. I didn’t think it deserved a recipe. But due to popular demand, here it is.
You guys, it is so simple. Just toss in the pan, season, simmer and serve. Seriously.
Sweet Potato and Chickpea Curry
1 can chick peas
1 can diced tomatoes
1/2 cup frozen peas
2-3 cups kale, roughly chopped
2 cups sweet potato, cubed
1 cup cashews, soaked
1 cup coconut milk
1 teaspoon cumin
1/2 teaspoon ginger
2 garlic gloves, minced
2 teaspoons red curry paste
2 teaspoons turmeric
2 tablespoons olive oil or coconut oil
In a cast iron skillet, heat oil. Sautee sweet potato until soft, you may choose to add 1/4 cup water to pan and cover to steam. Add kale, chick peas, peas and tomatoes (juice included). Mix in all spices, minus the curry paste. In a high speed blender or food processor, cream the cashews along with the coconut milk and curry paste. Add sauce to pan. Cover and let simmer for 10 minutes or until all veggies are softened and the flavors have melted together. Serve over rice with a touch of lime juice on top.
ps. Loki gave me a legit heart attack this morning. I took him to the pond to swim (he LOVES the water) and fetch some sticks, but my determined little pup decides while out in the water that he MUST fetch both a ball and a stick at the same time. This resulted in him basically bobbing for apples (aka a ball while there was a stick in his mouth) for 20 minutes in the middle of the pond. He was circling out there, trying to get the ball, with no luck. It just kept bobbing away from him, leading him deeper an deeper into the pond. I called to him, but that little fluff is one determined pooch – he HAD to have both the stick and the ball.
At that point, my mama bear instincts Baywatch instincts kicked in and tossed my phone and bag on the shore and swam in after him. Please note, this is not a human swimming pond. This is for like free range cattle and dogs who are hot after hiking. But there I was, swimming in after my fur baby. In my trail runners and lululemon. Now that’s love. I probably jumped the gun on diving in after Loki, he was probably okay, but who really wants to gamble with their dogs life?? So I swam out to him and helped him paddle back to shore.
And here he is, the victorious cockapoo with both his ball and stick.
